Well it's windy in wylie today. Going to do one brisket and a butt today for my wifes easter lunch at work.The issue I have is with big gusts of wind I have smoke coming out of the intake. Been runnin 250-275 for last 2 hours, but is the that going to alter the taste.
 
I had the same thing while seasoning a new XL UDS last weekend. I have 3 intakes and was running 2 open so I just repositioned the drum. I normally setup a windbreak though. I think it will affect taste because the wind may stir up ash that will end up on the meat.
 
I have not had any smoke coming out of the intake but I have noticed the temp goes up and down during gusty conditions.
The wind is fanning the fire.
I also do the the windbrake thing when it's windy. That cures it.

I live right up the road in farmersville.
when I cook on my drum in the wind, I stand a red brick or piece of 4x4 about 1 inch a way from the inlets.


A buddy of mine from work is coming over on friday to bulid his uds and my XL uds and do some cooking. I am going to teach him what I know about this thing we call BBQ.
