• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Will a UDS make 550* ?

I'd like to be able to do pizza when I get my UDS done.Is there a possibility that a UDS could be cranked up to attain 550*? Could you maybe move the charcoal further up the smoker for more heat,and use a pizza stone?

It will make 750* if you want it to. Regular UDS with more exhaust like ebijack did and it can get stupid hot...or cut back on exhaust and cook lower temps. Still need adequate intake.


The other alternative is make a 007...Wouldn't consider it a UDS although it's made out of drum and it's a magnificent pizza cooker.

Agreed.....UDS with adequate exhaust and vent holes will get nuclear hot....just make sure you have it clean and free of any pooled grease before going that hot.
 
I had my "007" over 600 degrees. It didn't have that big of a fire, but if you leave all the inlets open, well things will happen. :oops:

LOL Yup...you want high heat grilling just leave some inlets open and use smaller dryer splits.

Most cooks I'm vents closed after the fire starts unless the wood is green then I'll open 1 or 2.
 
Do you want to stop at 550*? Yes no problem.
If you want higher and not using the 007 method. On my UDS's I've buried the 750* gauges easily...to many times. When going for 800* give or take I have to remember to remove the gauge or they don't work very well after the high heat cooks.
I have way more intake and exhaust than most UDS's I've seen posted. And I've found if you want those high temps easily, use a 4" exhaust. One of mine has 3 5/8" exhaust and it will do 700* regularly, but not higher as my other will do with the 4" exhaust.

Thank you gentlemen very kindly for the information.That is really good the hear,as I was hoping that it could produce the temps I need for pizza.It's great to know that the UDS can do that,it makes it much more versatile.:grin: It is not a problem to add more ventilation,and I will certainly get that done when building.

Lately I've been doing pizza on the Weber. I build a medium fire, spread the coals evenly and put a pizza stone on the grill over the coals.

The wife makes a great homemade crust and marinara sauce, fresh mozzarella, sausage and herbs from the garden.

Put a piece of parchment paper on the stone and the pizza on top of that.

Great even cook, crisp crust, gooey cheese and no sticking.

Have fun.

Those are some good ideas mrboy.Doesn't it char the parchment?I thought that parchment can only handle something like 400*.Well,just came to my mind that the pizza will cook in just a very few minutes anyway.Probably not time enough for the paper to char. :)

To add to the rest:

Make sure your paint can handle it. My paint job can handle 1000*

I have some of that high temp as well.I may not even paint it,as it is (or actually will be) stainless.
