What a great result on our virgin run. Winn Dixie had boneless chuck roast choice grade for 2.98 lb. I rubbed it up and put it on my Girly Man Brinkman smoker without the water pan. I used the top rack only putting the meat about 24 inches from the fire. After 3 hours it was up to 160 internally so I put both in a foil pan, added 1 can of IPA beer and some apple juice. Foil wrapped the top and put it back on for 3 more hours. Checked it and it was 208 degrees and probe tender. Wife loved it and can't wait to get her hands on another Chuckie.
