• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I went out this morning and it is colder than a well digger's ankles..20*F to be exact. Turned the power switch "ON", set the temp....went back in the house. The pit was 30* on the inside before I started and was up to temp. in 30 minutes.
How can I not love this thing!
I am cooking a BBQ luncheon for our Santa Claus at the Capital Mall today.
On the menu:
Baby Back Ribs
BBQ Meatball Subs(new idea).
....the sides are being brought in by the employees.

Meatballs and ribs in the pit.
**Ribs- Look at the cuts in the slabs of ribs. This meat guy trims all his St. Louis style ribs like this. I'm not a fan, but these looked better than the baby backs they had. I hope they'll turn out good.

Damn, I should have hit the mall today I know a few employees there...missed a good party bashing! I think it is the only place I did not make it and still broke myself.

So, I remembered to get a pick of the ribs but I got a phone call from a friend I lost contact with through the years and I forgot to get a picture of the meatballs finished. The meatballs were great! If you've never tried them, you should sometime. I made the mixture just like a normal meatball only I didn't add any italian flavor. I added rub and my bbq sauce to it. I sprinkled some rub on them just before putting them in my pit.

Good lookin rib. The meatballs sounds like a good idea. I will have to give that a try, maybe for NEW YEARS eve.
