• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

The Kroger store has these for $1.99/lb. Dang big pieces of beef, most were around 12 pounds. Are they any good to put on the smoker and if so whats the best way to have them cut. The sign said that they would cut them any way you wanted them.

Do they even give you a hint as to what part of the beast the cut comes from? It does make a difference. If they are labeling in accordance with the USDA rules, the labal should identify the primal cut the piece comes from, then the sub-cut.
 
sirloin tip? bottom round? i'd smoke till internal of 145 and then foil in cooler for hour or so. might wanna consider cutting them in half and experimenting with just half one first. unless u have a big family to feed. I've done sirloin tips that way and are great. dont overcook though. my 2 cents.

I smoked a 5.5 Sirloin Tip Roast about a week ago. Took it to 145 , wrapped it and let it set. When I cut it, it was like a shoe leather. Great flavor, but not tender. I tossed it in the garbage (yeah, 5.5 lbs.) before my wife got home. When she got home she asked me "where's the Sirloin?". I told her what happened and she said, "I told you not to buy Sirloin!!!"
That cut of meat, IMO, does not have enough fat in it to ever be tender.
So, you ask how I would do a Sirloin Tip Roast? DON'T.

I dont understand why it was like shoe leather. I did one same way and was awesome. i think i posted pics on here. came out medium.
 
When the ad says "whole beef tips" they mean whole sirloin tips .Use mainly as pot roast or roast beef(cook same as bottom round).Top sirloin can be used for smoking,don't go past about medium.
 
I think mine was a little too done. Really bad. I guess I Jacked it up.
