• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Now that I know what a fatty is, I cannot believe that I have never consumed one until this day. The pics below show my cook from this weekend: A small brisket and my first two fatties ever!

The fatty on the right is a plain fatty ... nothing spectacular. The left fatty is maple flavor rolled in a coating of Good Sh*t seasoning.

I was disappointed in myself about the brisket. The family was over and they were hungry, so I rushed the brisket. It turned out a little too tough. I think it could have sat in the foil for at least 2 more hours.

ain't fattys a wonderful thing.........good lookin' chow Apron, kinda cool when the vultures(family) are circling just waitin' on the first thing that comes out of the smoker. i don't let em rush me anymore....I just start earlier!!!

jp has got it right. You have to start some fattys, some link sausage, ABT's, etc soon enough that it is coming out of the smoker early, to throw to the circling vultures[family and friends]
 
Made our first fatty tonight, stuffed it with green chiles and Chedder cheese and brushed the outside with Maple syrup. It was very good, just looking forward to trying new things out with this.

A fatty is basically a seasoned ground pork sausage log... (ex. Jimmy Dean's, Jones, Parks brand or homemade...)

Dont forget Tennessee Pride! Their Sage flavor is my fav.
 
Fantastic pictures! I need to get a new digital camera. My old one crapped out on me and I'm dealing with the 35mm for now. Takes great pictures, but you have to wait. Anyway, did my first fatty last weekend. I took a sage log and a maple log and mixed them together. Rolled it out and stuffed it with a mixture of cream cheese, sauerkraut, scallions, tomatoes, & crab meat. 3 hours on the Chargriller. Man was it good!! No leftovers. Don't tell your doctor about this. You'll get in trouble.

We cooked four of them this week end at westpiont comp. Man them things are good.

I cook mine to about 165 internal.
