Gotta Classicdelivered and set up Friday so I just had to do a break in cook. Had a 3 pack of loin backs from Sam's and I knew only two would fit if I cut one rack in half so I gave it a go. I don't remember when my other grill looked like this!
Loads it up and let it settle at 260 (grill probe read 299, just like on Big Joe).
Couple of hours bare, then wrapped with aniceMerlotfor an hour, then out of the foil for sauce. I left one bare just to compare. The preference was the rack with Sweet Baby Ray's. Took the two half racks off so some fresh squash and sweet potatoes could go on.
