• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Do you marinate? What grill temp do you use? What internal temp do you cook them to?

Any recipes or ideas would be very helpful! :biggrin1:

Thanks in advance!!!:clap2:

Back when I could afford tuna steaks, we would use olive oil, then Chicago Steak seasoning, put in a very hot CI skillet, bout 2 min per side, tasty

I marinade them with some soy, rice wine vinegar, grated ginger root and wasabi. S&P with some Sesame seeds and nori flake and sear the, 1-2 minutes per side over high heat. You want a nice sear with a rare center.

On larger pieces.

a little olive oil rollthe outer enges in a mix of montreal seasioning and Japeleno powder.

Hot grill and sear so about 1/4" looks cooked and very rare (raw) in the middle

Slice thinly and serve

Should have said I'm not using sushi grade. The steaks I buy are in a 2 pack frozen from Publix.

My method only works with fresh fish. You can freeze it afterwards but can't start out with frozen.

I coat in Creole season and EVOO, then sear outside like others said -
RARE - chopped capers and mayo mixed for a sauce.
Look at derHusker's link and that's about perfectly cooked.
