• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I took the whole week of Christmas off mainly just to cook. Got a brisket for Christmas planned, grilled pizza somewhere in the mix, ribs to take to the inlaws Christmas Eve. Prime Rib for the new years eve. Some fatties just to spead some holiday joy. :-P
 
Smoked turkey and fatties for my bunch. My dad made me sware to not bring anything when I go over for Xmas Eve. Going to try one more time on turkey before I give up. Hey, we all have to have something that we can't cook perfectly.
 
... everything centered around the ... double smoked ham ... from the Brethren. Just received the last item for the injection (Watkins butter pecan extract) and I will be using a full (20 lb) Smithfield smoked ham for this cook. Plan to inject and cook Saturday and enjoy until it's all gone. May not want more ham until this time next year!
 
I have a brisket as big as a zip code in my freezer begging to be cooked... and I might just do it on my Bandera. Now I just need to find more wood - Saaaaammmmiiiiicccchhhh????

double smoked ham for christmas dinner. I made some ABT's last week for card club that were a big hit and made 4 fatties while i was at it. Gonna have a fish fry for new year's eve...probably do some beans on the smoker.

Christmas Dinner for us over at Mom and Dad's will include brisket and a couple of butts ... with a fattie or two thrown in for good luck :-D
 
Going for a heavy dose of appetizers Christmas Eve including riblets, some mini fatties stuffed with roasted garlic and cheese, bacon wrapped dates, and Wine & Swine's beef tenderloin on crostini. Also going to cook two pork shoulders on Friday and make some sliders on lil buns.

I'm not cooking Christmas day. Making a 40# pig on the La Caja for New Years Eve.
 
Hosting a Friday Christmas cocktail party! Some new stuff (ABTs and Fattie) gleaned from this wonderfull website!

Got a 15# shoulder for pullin

3# monster fattie stuffed with Willie B's Bourbon rub dusted red onions, garlic/green and jalapeno pepper slices and bacon bits.

ABTs with crab claw meat, cream cheese and pureed red onion/garlic

Bacon wrapped grilled shrimp with a crab, chipotle, sour cream and goat cheese dip

Smoked wings

Oh yea, I'm doing a Double smoked Dr. Chicken ham. Also thinging of doing a smoked pork loin ham I saw on another site.

Smoked Pork Loin Ham
4-5 pound pork loin
1 qt. water. (or to cover)
1/2 cup Tenderquick or 1 & 1/3 teaspoon prague powder
2 cups maple syrup


Put the loin in a 2 gallon ziplock.
Mix the ingredients and then pour into ziplock covering the loin. Place in dish and in the refrigerator for 5 days. Swoosh it around every day.
**Note, those two gallon ziplocks are cool, but they ziplock on them stinks. So be careful when swooshing around.
On cooking day, remove the loin from the brine and rinse it really well, then pat dry and leave out on counter while fire gets ready. I smoked mine with hickory, at 225 it still only took about two hours. Take it off at 140-145 would be fine.
If you want, you can take it off around 125 and score it and glaze it, then put it back in to finish.

Glaze with Dr. Chicken's glaze.

Cooking two turkeys and a duck for Christmas. Going fast and hot, trying to figure the best temp for a five hour cook, I am thinking 325* or 350*.
 
4 lbs of wing drummies that I'll be smoking a la Dizzy Pig breaded with some Tsunami Spin and a small batch of Swamp Venom for Christmas at my brother's house. I offered to do a butt, but he is getting ribs from some place near his house.

I'm doing either a whole turkey or a turkey breast for the inlaws. Not sure how I'm gonna do it yet.
 
I'll be smoking Several briskets, turkeys , and hams for Christmas...some to give away as presents to Familia, some for customers,and some for myself.
having a little get together on the 23rd Throwin' on fatties :
3 Brat with carmelized onions and garlic w/ swiss inside
3 italian w/ smoked gouda,
3 anduille stuffed with smoked boudain and rolled in my own cajun seasoning
3 Tenn Pride. stuffed w/ roasted poblanos and queso fresco rolled in mixture of Mexene chili pwdr., kosher salt, Blk pepp., and paparika (smoked).

also be cooking some East Texas rice balls stuffed with chili and cheese. Along with 3 or 4 lbs of home made- Blk pepper and garlic sausage!!!!:biggrin::biggrin::biggrin:

THinkin' of makin a batch of pulled pork tamales to go with it....Man I can't even type for all the drool....
 
Dont know what all is on the menu yet. from what ive heard i will be getting to try my hand at a whole hog or javelina, im sure there will be prime rib and the sorts as well.. the FiL likes my cooking, so i get nominated everytime we go visit to do most of the cooking.
 
Going to the inlaws in NC for Christmas so no smoking until after then. I am taking a Boliche Asado (eye of the round stuffed with chorizo, ham, bacon, onions, and green peppers) that I will marinade with sour oranges.

Will serve with black beans cooked with a smoke ham bone, yellow rice and fried ripe plantains.

When I get back the smoker will run for days. Doing ribs, butts, briskets, atbs and fatties. Got to get the freezer back in order for the winter months. Also going to play with smoking some different kinds of sausage.
