• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I'm working this weekend, so again I will have to live vicariously through you guys! I won't be able to smoke anything, but I will probably make a big batch of red beans with some fresh andouille sausage on Sunday. Also, maybe I'll meet up with SDEWING and help him with his baffle.

Gonna possibly try my first overnight cook on the Klose w/the basket. Only way time will permit a cook this week. Albertson's has butts for $.99/lb through tomorrow. Maybe a 6-7 pounder. Then might try a couple of BBs since last ones tasted fishy. Might use different rubs on each slab.

I think I will cook some brisket, some butts, some ribs, and some chicken.

Buck Board Bacon will be ready for the cooker Sunday. Using the real stuff from hi mountain this time. Last time was a disaster trying home brew stuff. I'll read the directions again. Hopefully Neil will see this in the AM and drop some hints.
 
Parents are coming over Saturday, so a rib roast, & a fattie for sunday Bfast burritos.. Maybe throw on a few chicken wings for snacks.
 
I wasn't gonna cook anything and just take a break (we have around 20 lbs. of Q of various varieties in the freezer now) but after reading Rob's "Big Bob Gibson" pork recipe, I gotta try it! Can't stand looking at this rub I made so... Sunday EARLY morning, a single solitary pork butt goes on the Good-One my teammate just had me bring to my house after the AR.
 
6 butts and 4 briskets on my Spicewine smoker Friday night, after my sons baseball game. 4 stuffed fatties Saturday morning and some thick cut S&S bacon.
 
As usual, I haven't planned that far in advance! :rolleyes:

I've been thinking about pastrami, so may I'll do that on Sunday.
 
No Q'ing this weekend - Race weekend in KC. Probably some beer Bratts on the grill at the track.

I`ve been making a shreaded meat chili that cooks for 36 hrs for over 25 years now. I`m thinking of using some leftover frozen brisket to do a small test batch this weekend. Anyone make chili from pre cooked brisket before?

I would have to guess it will be increadble?
 
Going to do some brats in the water pan and maybe some bacon. Got some mountain mahogany I need to try.
 
I have some beef ribs, a small rack of spares, 4 fatties, pork brisket strips, my first butt and going to try a drunken chicken! Although I might go for Dr Pepper rather than beer in it. I found a stand at HEB last night. Almost forgot, some Italian sausage and some brats.

I do it all the time. It is one of my favorite things to do with excess brisket [if there is such a thing]. Always turns out fantastic.

Add me to the bunch. Glad I got half a 7 pound flat and a fatty in the same cryovac.

Now I want chili this weekend too.

Yeah, I figured so. I`m just used to using large chunks of raw beef that will break down in a crock pot after a day or two. Just never got around to pre smoking a few cuts for my crock pot.

Allllrighty then, menu is made up in my kitchen for Saturday night. Good weather for chili too in the northeast. Cold and damp.

BTW, you serve your chili on spagetti? Old idea that works great, along with filling burrito shells and such.

Chili on french fries covered with cheese. Artery clogging good chit.
 
Have to laugh sometimes when people eat my chili. They`ll be complaining the whole damn time they eat it that it is too hot. 5 minutes later when they`re done, wiping the sweat away from they`re forehead, they`ll ask for more. FROLMAO
 
My favorite way to eat chili is just a good big bowl full, with some good cheese and a few Fritos on the side.
