• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

What's going on your smokers/grills this weekend? Tammy and I are cooking for our neighbors and having everyone over on Saturday evening. Friday night, I'll put on two 15# briskets and four pork butts. Saturday late morning, I'll add nine slabs of babybacks and Saturday afternoon, about 15 bone-in chicken breasts, a big pan of beans and a few fatties will go on. We will have approximately 34 adults and 16 kids at our house, arriving around 5pm with dinner around 6! Everyone else is bringing a dish to share. One neighbor volunteered to supply a keg so that's a positive! :lol:

I just hope we survive it all! :eek:

Ithawed out a 1/2 of a fatty I dug out of the freezer. Might do a couple of pork butts tomorrow.
 
Got a couple of turkeys going in on Saturday.
 
I'll be cooking a beef rib roast Friday for a dinner with my kids and grandkids. I will throw some country style pork ribs in the cooker at the same time. The pork I will use Saturday in a Chicken and Pork adobo.
 
I have some buckboard loins that will be ready to smoke on Saturday, and I'm thinking it will be a good day for some salmon. I've been wanting to try some in the BDS anyway. A a bone-in turkey breast for Sunday dinner also sounds good.
 
Smoked last weekend, Most likly a Steak or shrimp grilled saturday. Chicken wings in the kettle on Sunday for Football and NASCAR.
 
I'm still in the mode of wanting to get out of the house, so I'm not planning anything. I did get a call, however, from a local guy with a hamburger wagon that wants to set something up as a joint venture. I think he wants us to do pulled pork once a month on Saturdays. If so, I'm hoping to do the Sauerkraut festival in 2 weeks... It's the largest festival in Ohio, with something like 200,000 people come to the festival, and it should be no problem selling sandwiches. Since he's an existing vendor, I don't have to be a festival vendor to sell under his license.
 
Chicken, Ribs, Pork and Brisket. Competing in Cape Cod solo this weekend using a new cooker (Caldera) new rubs and new sauces because all of my stuff is in my trailer which is at my team mates house in NH packed and ready to head for the Royal. Should be fun.

I read your blog about the new cooker. I'll look forward to hearing how you do with it. If I were closer, I'd offer to be a runner for you... Maybe I could learn how to do chicken then!

Do you have the new tall Caldera, or the original. They look well engineered, but seem a little pricy for their size. Do you run the Caldera with a Guru? Would love to hear your thoughts on the cooker.

I have the tall Caldera. I've only cooked on it once so far but thought it ran great. They are in the process of having a larger firebox made for them and I think that will be a major improvement. I do use a Guru on it. I have the one with the remote. It's very cool.
 
Let's see--4 fatties to make a gallon of Gravy for biscuits and gravy.

A corned beef flat to replenish my "zero inventory" of Pastrami :lol:

Whatever I shoot tomorrow afternoon and Sat. morning. Including the debt collector that keeps calling looking for Allison whatsername that I've never farking heard of.
 
Told Char I would hold back on smoking anything this weekend as we have been practicing for comp every weekend for the last two months. She says she is smoked out! Sometimes I don' get her ;)

So I will be doing some gyro's on the grill this weekend. Saw Alton Brown do it on his show and it looked pretty good. I'll let ya all know.
