• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I'm cooking a 9 lb. packer, 3 slabs of spares, 2 fatties, 12 apple-brined chicken legs and some hot dogs! Did I mention that I am NOT expecting guest! :lol: In fact, I plan to go over my mother's house and free-load, then come home to my personal stash of grub! :lol: :lol: :lol: My youngest brother ain't crazy, he will most likely follow me home - he loves fatties! Here are my initial pics, there will be more coming....

Did some country style ribs and pork steaks tonight. Better meat coming tomorrow with pics tomorrow and better stuff on Monday. It's going to be a good weekend!!!
 
Got 3 butts on the ECB right now. Just finished my sauce, now onto the beans. 12:14 am
 
Cooking for my brothers annual Memorial Weekend party on Saturday (today)... 14 racks of spares, sausage, beans, roasted corn... Didn't commit to briskets or butts this year due to job related travel and didn't think I would be up to an overnight cook!

8 whole briskets on now...1 whole chicken and 9 salmon fillets will go on later this morning. After that is done and delivered, 100 wings and 6 slabs of babybacks for a little family thing.

Good Morning Brothers, It's 3:36 am and I am up preparing for my early morning run on Sam's Club.
Got to make up fresh batch of sauce and rub. Planned cook for Sunday is 2 butts, baby backs, oysters,shimp, and maybe some smoke trout.
 
Butt over brisket just went on. Some stuffed fattys later on.
 
My ribs are on the pits! 3 slabs in Porky (WSM #2) and the rib tips and fatties are on the top rack of Miss Piggy (WSM #1). I foiled my brisket and put it on Miss Piggy's bottom rack; the temp of the brisket was 165* so its gonna ride until 195*...

What do you use in that apple brine? Do you glaze with an apple jelly?

Its a simple mix. I use kosher salt, brown sugar, apple juice, cumin, italian seasoning, onion and garlic powder. That always produces a real nice flavor for me.

Gonna get me some charcoal and something for the grill. Probably some shrimp for ginger sesame shrimp and maybe some fish.
 
well I was going to sneak over to Farmerville,LA to cook but my plans change on the last minute so Sunday going to cook two butt some ribs couple fatties and work on an open category for next weekends comp :-D
 
2 or 3 sirloin meatloaf, a fattie or 2 , a dozen thighs, and hog-apple baked beans.

After all, it is WSM International Smoke Day!
 
well, I finally got some time to fire up the smoker. got a flat and 3 butts on now, ribs will go on tomorrow

A fatty last night to season the new WSM. Today it's an 8# brisket, a whole chicken and a couple of pounds of boneless pork ribs for the first real cook on this one.

I think a couple of fatties will be in order, along with a small packer, some thighs and some rib trimmings for beans, etc... I'll be doing a little grilling for us Monday night too. My Mom hooked me up with 4 prime filet mignons and 5 small lobster tails. Surf and turf baby!
 
Hi guys I'm new to the site as far as joining goes.Been cruising by for more than a year now. I do have a question. What is a fattie? I'm gonna be cooking some rib-eyes,country spares,pork steaks,hot links,& babybacks for the holiday. Probably will take some over to my co-workers that have to work on Monday. Did some rib-eyes at the job on Friday we have a gas grill but I prefer the charcoal so they will get the good stuff on Monday.
 
Doing 7 racks of loin backs for my brother's cookout Sunday. Final test run for a new sauce/rub combo.
