• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

What to do?

Here lately I've been facing the same problem more and more. What do you do when it's your night to cook and it's raining outside? Outside of stirfry, I'm not too handy in the kitchen and I certainly don't feel like whipping up Kung Pao after working all day. Cost is also a factor as I REALLY don't want to work any more overtime for a while. Ever since they moved me off the Airbus and put me on the C-130, I've felt like just working my 8hrs and leaving. Here lately, I've been hitting my deep freezer pretty hard, but just about everything in there is either for the grill or smoker. Any ideas for the stove or oven?
 
If you have some BBQ leftover from a dry day, I have some leftover usage ideas on my blog. New one each Monday. Next Monday's article is Chili.

For non-que days and easy meals, get to know your slow cooker/crock pot. Lot's and lot's of things to do there.

Never really thought about that. Not too sure what to cook though as we only use the crock for beans.

Beef roast, potatoes, pearl onions, & carrots
Chili
Ham & Navy beans
Salsbury Steak
etc, etc, etc,

Any grocery store has those little pocket cook books in the check out lane. Usually one on 30 minute meals, grilling, or slow cooking. Cheap and lots of ideas to get you started.

Thanx. I'll start looking for some slow cooker recipes.
 
In my opinion, cooking inside's not a lot different than cooking outside except your heat source is different.

I love to cook chickens on the old beer can rack in the oven. Dust that sucker up with BBQ rub just like you do outside. Then S L O W cook that sucker at 225 or so 'til it's delicious. Serve it up with some Lipton Spanish Rice or such and . . . wow. That's some good eatin'

The two weekends a year that it rains here (drought mod) we make chili instead of smoking.
 
I like jambalaya, red beans and rice, and now brunswick stew. You cook a big pot, and then freeze in small containers for single servings.
 
I always keep a couple of boxes of different Zatarain's rice mixes in the pantry.

-Fatty Dirty Rice
-Smoked saugsage Jambalaya with chicken

Hard to beat for a quick meal.
 
Get yourself a food saver, cook like mad on weekends, and reheat during the week! All the suggestions offered earlier are great! Gumbo, jambalaya, chili, tamales, enchiladas, marinara sauce, etc. Get a good cookbook in some cuisine you like and learn how to cook it! Try Thai, it is great! Thai curry can be assembled with a can each of Thai Curry Paste, Coconut Milk and some meat/Veggies in 15 minutes. Good luck. Woody
 
Here are a couple of ideers:

Breakfast is harshly overlooked. Having it for dinner is wonderful. If you don't want "traditional" breakfast items, scramble up some eggs, mix in sauteed onions, peppers, some kind of meat, some hash browns, wrap in warm flour tortillas and make breakfast burritos.

Fish is the next thing that is high on my list. It's good for you and there are so many kinds..... Baking it is the easiest (and less clean-up) but pan fried with some oven fries is hard to turn down.

We had some cold and wind earlier this week and I cooked Brunswick stew with seafood (crab, clams, shrimp and salmon) with some leftover grilled chix and sausage. I also made some cheesy hashbrowns Cracker Barrel Style. See the breatheren recipe section for the recipes I used. And for that matter try some of the other recipes as well; hell it's free man!

Glad you like it. Looks like we'll have to exchange tips in a couple of months, I'm still figuring out all of the goodies.
 
Yes, the wifey has read the whole farking manual! She told me to cook, she would take pics and I can post them! I like the arrangement!
 
Here's an unbelivably easy (and really tasty) recipe for a work night... take a can of corn, a can of diced tomatoes (any kind), a can of blackeyed peas, a can of black beans, and a can of kale. Drain 'em all and throw 'em in a pot or dutch oven. Slice up some kielbassa or smoked sausage and throw that in. Cook it on low for about 20 min or so, and serve in a bowl. Season with tobasco and ground pepper.
