• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

What to do with a Brisket that's too big?

I just got another brisket yesterday to give it another go with the WSM. While I was prepping it, I figure it's going to overlap the WSM by a bit. Would you guys recommend triming it to fit the smoker or just do some kind of flap job on it?
 
Do you have a rib rack or a V rack? If so you can drape it over that, and in about 4 hours it will shrink enough to remove the rack and lay it flat.

What he said. Works just fine. I've used a beer but chicken rack.
 
Just Put It In A Cooler And Pack In Ice. Send It Next Day Air To Scotty D And I Will Cook It And Let You Know If You Would Have Enjoyed It.

No Really I Would Just Trim It Or Do What Third Eye Said.
 
I'll put my rib rack together from my BSKD and see if it'll fit in there ok. If it looks like it'll work then I'll do that, if not, I'll trim it up a little.

Folded them several time with good success. Double Decker Mod.
 
Slice it in thin strips until it fits. Use the strips to make jerky!
 
This happens to me all the time. I usually just fold the edges up so it will fit on the ECB. Somtimes I can fold it in a "U" shape so it'll fit without touching itself.
 
I've draped a big'un over a stainless bowl until it shrank enough to lay flat.
 
Great ideas guys thanks. I got home and looked at my rack and it was too big for the WSM. It looks like I'm gonna have to trim it a little. Maybe stick the end piece next to the Butt I'll be doing too. It'll probably get done faster and I'll have it with a littl BBQ sauce for Sandwiches earlier in the morning. I just hope the main piece doesn't speed cook like my last one did.

It's about an 11lb'er before I trimmed the fat off. It's got a pretty big fat roll in the main chunk so I'll make sure I don't get the therm into it this time.
