• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

A couple of my work buddies want to try a upcoming competition where one of the categories is sausage, Ive never really messed with sausage on the smoker and never at a comp. Can anyone give me some ideas on a few different sausages to try? Any tips would be greatly appreciated.

I have had great feedback using Mountain View Meats Jalepeno Cheddar. They are in Oklahoma and not sure where all they are available but Mike is a super nice guy. They have 4-5 varieties that are all good.
 
Are they requiring you make your own on site ?
fwiw... Natural casings and cooked so that they snap seem to do well.
 
I'd find out if the rules call for it to be raw before making any decisions.
