• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

What meat would you smoke for a special guest

If you were having a very special guest over to the house and they asked you to smoke/bbq your very best dish, what meat would you choose and what smoker (if you have more than one) would you cook it on? Feel free to list any special side dishes or deserts you would make.

I would probably go with tri tip on the PBC, fresh baked baguettes and grilled asparagus.

I'm about equally good at all the meats, so I'd try to find out what they like. Just because my ribs are awesome doesn't mean you like pork. :)

If it was dealer's choice, I'm thinking either a beef short rib plate or cowboy steaks. Big hunks of beef with a handle. Nothing more Texas than that. If it's a real VIP, I might even order from Snake River Farms.

Not a friend but a special guest. Think head of state, boss, your favorite actress, Keith and me, etc. Does that change your answer? I'm guessing not!

Just my regular stuff. If they don't like that, fark 'em. :mrgreen: I might fancy it up a little by doing cupcake chicken, then adding St. Louis ribs, and some of my homemade jalapeno sausage for a little variety.

Because of your location I'd have to go with ribs.They maybe thing wow we in St.Louis so I know we'll get some great ribs.I would serve them with smoked bake potato,smoked baked beans,and smoked or grilled corn on the cob.I would also have plenty of the adult beverage you city is know for.

Don't go to any trouble... I can do the cooking. You just sit back and relax. Go ahead and supply the tri tip, I'll put it in the roti and cook over some splits.

I've heard that tree rat is a delicacy in Van Zandt County so thanks for the hospitality!:wink:

Good idea, but just note we have several small breweries that put out better beers than AB InBev. Schlafly and Urban Chestnut to name a couple!
 
It would completely depend on the definition of very special friend, if we'rea talking date, then filet, perhaps a spinach salad, and whatever looked good at the market.

For a bunch of guys i wanted to impress, brisket, Creekstone or Snake River Farms.

Yes Sir,some of the micro breweries turn out some really good product. That would make all even more special. Best of luck,let us know how it goes.
