sorry guys I don't know what the bend test is ?
I do this with a toothpick, they are done when it goes in and out smoothly. The bend test only seems to work for St. Louis spares or loinbacks. For whole spares, by the time they bend, they are over cooked. Even with the others, the bend test, for me, is frequently over cooked. Each to their own.I use bamboo skewer and probe between the bones.
