• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

what is the bend test on ribs ?

Pick up a rack of ribs with tongs you think are done. Grip them lengthwise to about the middle of the rack and then pick them up. The meat between the bones should start to almost tear....I'm sure someone on here has a picture of what I'm trying to say......
 
I use bamboo skewer and probe between the bones.
I do this with a toothpick, they are done when it goes in and out smoothly. The bend test only seems to work for St. Louis spares or loinbacks. For whole spares, by the time they bend, they are over cooked. Even with the others, the bend test, for me, is frequently over cooked. Each to their own.

I have started doing the tootpick test too. If I remember. I like a little bone tug...
