• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

What do I do now?

Got nervous with my near 15# brisket, started late yesterday afternoon. The cimarron ran hot yesterday (gotta flange firebox door), long story short, I just coolered 2 briskets and dinner is 12 hours away. Actually I got tired around midnight and put them in the oven and for now they're still wrapped and in the oven which is now off. Any suggestions?
 
You have to decide are you going to keep them over 140º internal or cool and reheat. At this point you still have 10 hours, I would keep them over about 150 to 160 in the oven and you could dry cooler them as you get closer to serving time. I would have them in a pan to make sure that the juice would not be lost if you got a hole in the foil.

Jim, Thanks! I think I'll go the hold route rather than cool and reheat, may check the points a bit later and if they need it I may carve them off and do the burnt end mod.

BTW-Fast Eddy was on local morning news yesterday. He has turned over production of his cookers to smokeshack and is opening a resturant.
 
Did they get done? If not, a slow oven should finish them off.

If they are done, I would think you could slice them, put them in a gallon bag and pour the juice over them. Heat up what you want to eat with the juice and would think you'd be OK. That's what I do when I finsh my briskets and it's just for the family.

Oh yes, were at 199 @ 6:00 when I got up. There 184 now, just turned the oven back on, lowest temp is 170. Will see if they hold and will turn it off from time to time if internal starts climbing again.

I was pleasantly suprised, very shreddably delicious. Chiefs will be OK, I was proud of the improvement in the defense, if the offense had kept up their end of the deal we'd have come out on top.
 
I understand. They will do it like my baseball Cardinals. Pitching just good enough to get by, with a killer offense. Makes for interesting games.

Back on topic: Glad to hear at least the brisket was good. :wink:
