• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Well I finally got the first comp done!!!

First comp in Odessa Texas....Didn't place in anything but, made the final table in Chicken and ribs.....since you don't get your scores in the IBCA it's pretty hard to tell what the judges wanted that I didn't deliver though.....I had a great time, it was lots of fun and I met a lot of great people.....the only down side was, I'm exhausted!!!:icon_sleepy My little two man team (myself and one other) has had it!! I hope to have some pics as soon as I can pull it together lg enough to post them:biggrin:
My thoughts on the meat:
Ribs were spot on, exept after trimming the were really small,meaty but small also I think presentation probably got me here.
Brisket....I think it was too tender, and I definatly need to work some more on my rub....to peppery.
Chiken ....GREAT!! I think I needed to crisp up the skin a little bit more and it will do much better....
So anyway....thanks to all who've encouraged and given tips I got thru without Dq'in and had fun to boot.....couldn't have asked for more:mrgreen:
 
John, congrats on getting through the first comp. The main question is did you have a good time, the rest will eventually come.
 
Congrats, John! Glad you got everything done and seem to have done a good job with it. Now get some sleep.

Congrats John,
They get a little bit easier every time you do one. You find ways to save yourself time on set up and clean up. Also if you work in shifts you can get some rest.
 
Good for you. I remember the first comps. Boy were we tired. Since then we have pared down the stuff we take and our last one was actually our best so far as having less stuff to do. We used to take everything including the kitchen sink. When we started we started with 2 trucks and 2 trailors. We are now down to one truck and 1 trailor and this last competition we were even less cramped in the truck. We were always shot by turn in time and not looking forward to cleanup. This last comp was the first one ever that we were actually packed and ready to pull out before the awards ceremony. It felt fantastic!

Don't be afraid to try another one and maybe see if you can get an extra set of hands there.
 
I'll definatley be bringing an extra hand or two next time.......I have found a few items that I could have done without, but I tried to go light on the gear.....Just like anything else the tear down and clean up is the worst.....your just ready to get to bed and you look over and, there's all your crap, dirty and LOTS OF IT!!!:eek:
Great time though I can see how this is an addicting activity! I'm already spying out my next comp......should be the end of Sept!:biggrin:
 
I know the feeling. My brother and I recruited our dad to help out. He's kind of our technical engineer (non-food related) and runner. A 3rd set of hands (especially a clean set of hands) comes in very nice from 10:30am on the morning of turn ins.

We're also working on him to be the fundraising committee for an RV.
 
Good job, John! Me savvy IBCA, and you're guess is as good as mine. Tony of Grilla's in the Pits is getting it figured out. He is improving at every contest. As for us, we just keep practicing and hoping to get better at the next one. We'll be at West this weekend. Got a new brisket to unveil this weekend. Gotta luv this comp stuff.
 
"Having a good time" that's the main reason for being out there.

Thanks for the kudos Larry. I will give you some sound advice at West. The very first thing new teams should do is, taste the final table entries. They will tell you where you need to be. That said, remember at the last West competition, Higgenbotham got 1st, 1st, 2nd. Well at his next comp, he didn't get any calls, so it can sometimes a matter of knowing what they want in each region.

I really expect to get called in every category this weekend. Wishful thinking on my behalf....haha!!!
