Weird cuts at Sam's tonight

Beef Special Trim C.O.V - these cuts were in vacuumed packed, could not really tell what it was. Cheap though, $1.92/lb.

They also had what looked like large shoulder roasts pre-sliced thin for Milanesa(Mexican chicken fried steak).

I have seen the COV abbreviation on several Sams products, anyone know what that means? I googled COV and found the term on several sites, but no definitions.

I paid $1.92/lb. for a cyopacked 19# Rolled Chuck last week at Sam's. Half of it went into the 'dera yesterday morning and the other half went into the freezer after a quick appointment with the foodsaver.
