• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Looks great. Good thing your far far away. My wife's favorite breakfast is Gumbo (cold pizza runs a close second).

Did you do a shortcut roux? My stovetop ones take me quite awhile.

I did it on the stovetop in the same pot that I was cooking in. I use whole wheat flour instead of regular flour so it started out brown and it already had a nutty flavor so I only cooked it 15-20 minutes in a combo of butter and Olive Oil.

S'cuse me askin' like, but what the heck is Gumbo?

Gumbo is basically a stew with it's origins in Louisiana. It's one of the few dishes that is both Cajun and Creole (Contrary to popular belief, those are two diferent kinds of cooking). The most popular kind is seafood gumbo but if you go to 100 different homes in Louisiana, you will get 100 different bowls of gumbo. It's a dish that everybody makes but nobody makes the same.

Gumbo usually has some combination of seafood, chicken, sausage and okra but other ingredients like ham, duck or tomatoes can be added as well.

The one unifying factor is a thickening slurry called a roux (pronounced "roo"). A roux is made slowly adding an equal amount of flour to hot fat (butter, oil, lard or a combination of these) and cooking it over low heat until it reaches a desired color. A lighter roux has more thickening power but a milder flavor and vice-versa.

Remember, if you didn't make a roux, all you have is soup!

My mom is from Texas and my pop is from Louisiana. I get the best of both worlds!

Believe me Brother, he is qualified. I have tasted his cooking, and he can cook. Check out his website sometime for some really good eats.

Mista, dude my sister has lived in Texas her whole life and she freakin hates bbq. Can you believe it? However, shes good to me. She makes all her new boyfriends go to HEB and pick me up all them Fiesta rubs I love so much and send em to me UPS. If I told her to, she'd hunt you down and load you up with chit to bring back to me.
Realizing this is a Morgan trip I won't even ask.
