• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Ok, I finally get to cook again. Wife's in school 4 nights a week taking 16-week courses in 8-week sessions - same amount of work with only 1/2 the time. So that means the weekends have been making sure Momma has time to study.

But this weekend I told the boy we're firing up the smoker to get stuff ready for his birthday. The party is next month so I'm gonna foodsaver all of it and reheat on party day.

Gonna do 4 pork butts - the ones from Sam's are usually between 5 & 7 pounds each - and got a 12# packer brisket thawing in the fridge right now. Saw one of the stores has Spares for .99/# so I'll get some of those to cook now and some to throw in the freezer to smoke later. Probably do some hot links and/or brats to fill in - these went over better than the fatty last time so gonna keep the family happy!

What's on the agenda for you guys?
 
We're still gnawing on leftovers from last weekend. (We just can't eat like BigMista and MrsMista!)
Going to do some dawgs & brats, tho. Maybe a fatty. ;)

I'll be transplanting this weekend. I suppose I may as well smoke something too while I'm at it.
 
My folks are coming out on Saturday, so I think I'll try to find a nice rib roast and do a prime rib... Don't know about Sunday yet... it supposed to be a nice weekend...
 
IF MrsMista doesn't have any plans for us I might smoke the ribs I bought on Saturday. If we do get busy I have some catfish filets I might fry on Sunday...
 
If all goes well, I'll try some St. Louis style ribs, beans, corn, and maybe some andouille.

Planning on some turds and sausage for sure. I'll have to wait and see what the meat looks like and then figure it out. Thinking some country ribs maybe toss a brisket point in to get a little smoke before turning it into carne guisada and possibly try the salsa recipe Mark posted yesterday.

Eastgate IGA in Columbia. Haven't been down to see these but the last time I got them they were fresh and already St Louied & had the membrane removed. Just needed to be sprayed & rubbed. I'm going by there after work today.
 
No cook for me this weekend. My Duaghter's swim team, which I coach, is having it's olympics on Saturday, where every team in the league swim againist each other and on Sunday is the division championships.
 
Tell your daughter good luck, BQ. And spend a great weekend being a good dad!

All the more reason to smoke. My daughters swim team did the grill thing when she was doing the swim team mod., but smoking ribs would have been better. Have some of the parents be pit bitches, and the ribs should be done by the end of the meet (meat). What a way to celebrate the end of the day. Just need a mobile smoker.

Great idea Bigdog, but this is NY. Ain't gonna happen. Mobile smoker? That's a cab driver.
 
We are having some company, so Saturday will be a butt and a 7 bone chuck roast for pulled sandwiches. There'll be the requisite turds, etc.

but....

I am also thinking of putting hot dogs in the smoke chamber for an hour and a half for the kids. Wonder how this will work and if the kids would just rather have the dogs grilled? In this vein, I have never actually cooked brats in the smoke box either. Assuming I do NOT prepare them as I typically do (simmer in beer/onion/garlic before browning on the grill), how does a virgin brat hold up in the smoke chamber. It just seems like 2 hours in the smoke box would dry them out. Maybe try a 1-1-.01 on the brat? (hour on smoke, hour in foul, minute on grill?)

now this has me thinking, I do believe next week I will smoke my sonoran style dogs.
