Well any brisket weekend is good weekend to pratice comp style brisket. So cooked this PRIME sams club brisket for wifes bday cookout. Tried somthing never tried before with rub combo , man it was GOOD ! couple more runs of pratice with it and i think it would do well in a turn in box.

Comp trimmed , smoked at 275 over jeaulus devil lump charcole. AT the 4.5 hour mark she had an amazing bark and color. Wrapped it , temp was 165 when probed.... rollled that holding 275 for another 3 hours , checked for tenderness at 198 , took to 207 before felt right to me.

2 hour rest , and it was $$. everyone was just over the moon about it, one of best feelings when family and freinds appercaite your BBQ. Dont get much better !
