• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Was given "permission" to order a Humphrey's smoker, need some help

My awesome wife has decided that we really do "need" a real smoker and ordering a Humphrey's make sense for us. We have a propane now. What led to this? Brisket, she grew up in Texas and good brisket reminds her of home. She says that I have gotten into the very good status. The other reason, she doesn't sleep well when I am tending a smoker all night or get up to start before the sun comes up. So a smoker that can go on its own all night just makes sense. I love this woman.

So here is where I need the collective brethren's help. Does the slide in water pan make a difference over a drop in with the heat deflector. The slide in eats up one rack space, and would possibly bump me up from a pint to the down east beast, I will be cooking for my church as well. But, if the slide out pan is worth it then I will go with it.

Oh, and she is letting me go with a St Louis Blues color scheme including a big Blue Note on the door.
 
I'll say this, one thing I can't figure out is how everyone can throw food on a cooker and just go to sleep? I would be up and down every 30 minutes worried somethings gonna catch on fire while I'm asleep! LOL.

Anyways congrats on getting permission to get a new cooker!

Humm. This gives me an idea. Maybe I should try one or two overnighters to see how my wife tolerates. The worst that could happen is she tells me to get a new smoker, correct? :idea:

It worked for me! Be sure to really get good and smelly so when you climb in bed she can smell it. You will have a new smoker in a week

New smoker or sleep in another room; new smoker or sleep in another room; new smoker or sleep in another room. Weighing options. It's a close call....!
 
But seriously, I am sort of in the same situation with the water pan option which could trigger moving from a BB to a Pint. Certainly seems like the slide out is easier to deal with at clean up.
 
I don't have one but want a Pint. With drop in water pan but also extra slide in water pan and removable plate so I can do Whatever the Hellz I want.......... :mrgreen:
 
So simply place a 1/4 inch plate on the bottom?

Chad had told me before that it is a little more than that. It involves deleting the bottom rack and modifying the one above it. He said that there needs to be a little airflow beneath the water pan.
 
That's understandable. Would have to place slide in water pan a half rack or full rack up further from bottom to maintain good air circulation.

Hmmm then I would just go drop in I think.
 
I have a slide out and love it. Biggest problem with drop in is cleanup. A lot of time you won't use all the water and getting it out after all those drippings have mixed in and not splashing is a challenge. On the other hand, if you don't put in enough to begin with its as simple as sliding it out and adding more. I also added another grate which helps when I want to do a lot of ribs so 4 grates total. I have a battle box
 
I contemplated a slide in water pan on my DEB. When i measured the drop in pan, they say you loose 1 rack space, but realistically you loose two because you do not want to set food on top of the water pan, at least I didn't want to. I opted for the drop-in.
