• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Briskets ready for today. Case catch weight 82 Lbs. Avg 13.8 lb each ( 6 to a case)

Those are some great looking briskets there, Joe. And that flash is very color revealing! So do they look more brown or more red to the naked eye?

Thanks Arlin, Actually I 'd say to the eye it is right in between the two.
 
Just for fun, decided to do a weigh out. 82 lbs uncooked.
60 lbs cooked. appx 1/4 loss in weight.
I knew it was somewhere around there, but never took the time to really see.
 
Don't forget to take into account the trimmed fat.
 
Those are some very nice briskets.

Like Mista, I find the shrinkage to be higher once you start trimming to server. I've found 40-50% normal and have had some big/fat briskets to go as high as 60% shrinkage/waste.

Brisket is good eats but not especially cheap. $.99 per pound raw can become $1.98 per pound at the table real quick. I haven't seen brisket around here (packers) under $1.49-1.69 in a long time.

That's why some places will sell it at a premium AND call it 'extra moist'. Did I mention they charge extra for it too?8-)
 
You don't want to know what I get for it.
But people love it so much they don't even flinch at the price.
