• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

More future pron anyway. Just getting started this AM. Doing a cook for a friend of a friend's wedding reception. Figured anyone interested could follow along. There won't be any sliced pics probably as they will be doing that on site.

5 - 20 pound PRIME briskets
4 - racks of St. Louis ribs
6 - bone in turkey breasts
1 - full pork belly
2 - pork butts

That fire in the box is a good place to start. Will be following . Good luck today. I will be throwing on some short ribs and some spares in a little while on my Shirley.
 
I still have to inject and rub the birds. Also need to season the ribs and pork belly. I usually don't rub pork ahead of time because it can get "hammy" tasting too me.

My oasis for most of the day. I was lazy and used the wheeler to haul my cherry wood.

Costco. Case cost is $2.47/pound here. There is usually one 18-21 pounder in each case. They will break them open and pull the big ones for me.

They are all wrapped and just waiting for them to finish.
