• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Vonnie's Jalapeno, Cheese, Bacon and Potatoe Pie

These freeze well and are as tasty as you can get

INGREDIENTS:

Potatoes - thinly sliced
Jalapeno's - deseeded and finely diced
Cheese - grated, crumbled or thin slices
Bacon - Fried and roughly chopped
Thickened Cream
Garlic - 2 heaped teaspoons
Butter - 25 grams or 1 stick





Smoked crumbed cheddar cheese



Homemade Buckboard Bacon.





Melt butter and garlic together in baking dish, Spread evenly in dish





Layer bottom of dish with the potato, overlapping each other.




Then a layer of cheese, then spread jalapeno and bacon bits (as little or as much as your taste buds desire.
Continue layering until 1 cm from top finishing with a layer of cheese










Pour about 1 cup of cream over the potatoes




Place baking paper on top then place alfoil on top again.






Bake for 1 hour - covered'

Uncover and bake a further 45-60 minutes or until cooked (and crispy)








This is just a guide as you can bake this in the oven or any weber, Weber q, acorn, or any BBQ gadget that is at the correct temperature.
Feel free to swap and change ie: use oven to first bake then pop into the BBQ of your choice to get the smoked effect.

I scrolled as fast as I could to get to the finished photo. Man, oh Man...I am weak in the knees just thinking about it! Great job Vonnie!
