I don't know what that cut is called, either, I have a long way to go learning that kind of thing. This is a link to the Canadian government website that describes cuts of beef but it was written in 2012 so our names may differ from US names here and there. Recently there has been an order to homogenize Canadian and US nomenclature but retail stores and butchers have not all conformed to it yet.

Meat is frustrating, the same names are used for different cuts making it a nightmare!
No idea how that happened.:confused:
