Where do you guys put your vent opening if you are positioning the coals on one side- over the coals, or over the meat, and why?

Opposite of the coals (assuming you're using a Weber Kettle) - and if you have an old school kettle with the independent bottom vents then close the one under the top vent and use the other 2 for intake.
 
What early mornin' smokin' said. I like the convection to draw the smoke over the food for smoking, I like a direct draft for high heat.
