• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Worked on further processing Saturday of my son in laws white tail deer


Grinding in some pork butt




Mixing a 5lb batch




Stuffing some 21mm snack sticks




End of Saturday. 25 lbs of summer sausage and 25 lbs of snack sticks





Double smoking today




After 5 hours of cook time

Actually it is my first time with sausage. Picked up the mixer and stuffer this past week after he shot his deer. I did a lot of research and hope the final results show it?

It's fun working with son in law, he enjoys the cooking as much as I do

I Learned a few things on this first try.

The snack sticks coiled were pushing the edges of the racks. Being that close, sections were over cooked. I think hanging rather than coiling would be a better method.

Summer sausage worked well hanging.

Both methods have great taste.
