• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Hey all. Just wanted to stop in and say hi and give a quick update. We are currently in the process of finding a spot of our own. Not so much a restaurant just a catering kitchen with a small front to do tastings and possible pick-ups. With our kitchen now we are limited when we can get in and we are just out growing it. So I'll keep you posted on that front. Over the weekend I did a wedding reception for some extended family. Just did the meats. Chopped brisket and Tenderloin. Set-up a carving station for tenderloin to make it a touch fancier. 400 people though so about 10 minutes before they started the line I pre-sliced to get ahead and basically was slicing the whole time. Think I got as close to what Franklin does daily as I would like to. Enjoy

Are you still using the UDS, or have you gotten yourself a Shirley?

Yes sir we still use the drums as much as possible. They are always with us when we vend with sausages or chicken on there. We do have a reverse flow that I made with the wifes uncle to keep up with production though.
