• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

My baby girl is getting married on July 17th, and requested I do the catering. I took a pic of the meats I had, while waiting on a couple more chuckies to be cut. The brown meat package is a butt, they also cook meats, and the butts were pulled from the smoker and being wrapped when I arrived. At $26.99, out the door, I thought it would make a nice lunch sammy before I went to work...

I have 2 full packers, 26 or so lbs of chuckies for faux burnt ends, and the stuff to make a quadruple batch of Wampus' baked beans. Hope that is enough for 30 people, lol...
 
Nice buggy full of meat. I believe you will have enough for a great wedding party.

Thanks everyone. I am firing up the UDS' in a few and doing the chucky burnt ends today, will reheat and sauce just before leaving tomorrow. The briskets will get a hot n fast cook in the am. iInce I will have room, I picked up a rack of pork ribs (I haven't done any in years, so I need the practice, lol) and a couple of spatchcocked birds for tonight... I work a lot and rarely get to cook, so I am making the most of the opportunity...

Sadly, I take crappy pics, so I am pronless for the moment. For some reason, all the pictures are coming out with a weird orange tint...

The spatchcocked ladies turned out great, they were rubbed with Outlaw dry rub, and slathered with (at my other daughter's request) SBR. And I did, hands down. my best rib cook ever. No foil, just heat and meat until the ribs had pull back on the bone, and I had a LOT of 'Weep". These were rubbed with Simply Marvelous' "Genie's Hooch". This stuff is Killer, although the spice level is more than my bunch will tolerate. That just means more for me, lol... I slathered these with some Blue's Hog Smokey Mountain sauce.

Maybe in a little while, I can actually sit down and really taste them...

I hope so. I actually went out and grabbed another 15 lbs of chuck. After smoking the batch in the cart, they looked kinda puny...

I have all the chucks cooling down now, just came inside. I will cube all of them in the morning (shortly) and finish rendering for the faux burnt ends. I also have my beans assembled, and I trimmed and rubbed the briskets, so they are ready to go.

Headed to bed for a 5 hour nap now...

Man, this is too much like work, lol... Briskets probe like butter, 45 minutes earlier than planned, no biggie... They are wrapped and in a coller filled with towels. Ended with a FULL full sheet pan of burnt ends, they are glazed and setting the sauce on them now...
Beans are awesome as usual... Thanks Wampus!. They will be the consistency I want shortly. All in all, no problems so far, I should have every thing loaded and hit the shower and change right on time.

Hopefully, someone else that can take decent pics will send me a few so I can post some decent pron...
