My dad died back in January. We had a wake up in Oregon for the friends up there and then one a week ago here in SoCal for the SoCal friends. I smoke a bit over 100 lbs of meat, 45 lbs of pork butt, 25 lbs of chicken, and 10 racks of ribs. Over 60 people showed up and went thru over 80 lbs of the meat.

Thought you guys would appreciate the setup. Borrowed the 3 other UDSs that I helped build and had them set up on my RV pad. Everything went perfect.

Sorry for your loss, but glad you got to "celebrate" your dad with a bunch of family/friends and some great Q....

I got a question that came up after the party. How do you guys store left over BBQ? We planned for 100 people, just in case, and ended up with 60. I would rather have too much food than not enough, same with beer. The left over beer is in the kegerator, that's easy, but I didn't have any way of storing left over meat.

I've thought about this before as I would like to bring food to work and stop eating out so much. So if I were to smoke say 4 chickens on a sunday and chop them up in personal portions, what would be the best way to preserve them for a week or two? I have a vacuum sealer, but I have seen meat get weird at about the 1 week mark. Would freezing be OK, never thought it would.

Thanks again everyone, my dad would have really enjoyed the event, especially the UDSs. His motto was always "I don't care what it costs, I can build it or fix it".

Best money you can spend in BBQ is on a vacuum sealer. Your food will be as good a year from now as it is when you pull it off the pit. A good sealer is a Food Saver. You can get them almost anywhere, and the investment will pay returns for years to come!

I am pretty sure my vacuum sealer is a food saver, though its a couple years old. I love it.

I agree on the food saver for the food.I don't think i've ever had any beer left . Got friends that like to drink.:becky:
