• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Hi everyone...and thanks for letting me join the BBQ Brethren forum. I have never used a uds before. I want to cook a boston butt with wood coals only. I need to know what temp...and how long would it take to cook...or smoke. Can anyone help me. Thank you very much.

You mean shoveling in wood coals? If that's the case you'll need a door.

Butts take around 45 minutes per lb @ 300*
 
What temp is a loaded question around here. There are two schools of thought as well as those in between. The low n slow camp recommends the more "traditional" smoking temps of about 225-275. This takes a longer time to achieve doneness but they argue that gives the collagen and fat more time to breakdown so it's worth the wait. The other camp is hot n fast which as you can imagine advocating cooking at a higher temperature (300+) for a shorter period of time. They are you the difference in taste is negligible so why wait. Both camps and thenin betweeners turn out great Q. You should experience the and decide for yourself.

Try not to worry about time and temperature so much as feel and to some degree internal temp of the meat. Many things effect cook time so don't rely on time. Just some examples cooking temps, difference in the meat itself, whether you wrap or no, etc. However you can use some guidelines like the one provided above to plan your meal.
