• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I wanted to get an idea of how this uds would run so I put about 8 pounds of charcoal and once I got my temp up to 350 it only stayed at 350 for maybe an hour. Right now it is staying at 300. I have both caps open and ball valve open. What can you do do get temp up to stay around the 350 mark. Got to learn this thanks.

Where was your exhaust set ?
Run it wide open and see where it go's.
 
If you did not light a full chimney of coals and dump on top of your unlit coals and covered the drum to soon. That could be your problem. Or
If you are unable to reach 350* with ease, you need more intake and exh IMHO I can reach 750*+ without a problem to do pizza/sear meat etc.
 
I have found in my WSM the more wood chunks I mix in with the charcoal the easier it is to cook at higher temps.
 
That could have been a problem that I didn't use a whole chimney full of lit coal. Another problem I wonder is I was using Walmart cheap brand of charcoal

If you look, the wallymart brand is actually made by RO
Which is embers at HD etc etc
Low n slow, use 1/2 chimney, higher than 300* use a full chimney
 
I'll second ebijack. I usually set my intakes the same for both temps, then open my exhaust all the way. If I want a lower cooking temp I will only light 1/2 a chimney. For hotter temps 3/4 to full.
 
Cooked on my drum for a couple of years. I know there is more than 1 way to do anything- but I've never dropped more than 20 hot coals on my basket. In about 45 minutes I'm tooling along at 300. That's with burning reused, new, no name or brand name stuff (mostly kbb)
