Can you folks give me the lowdown on the UDS design. I have read that it cooks faster because of convection. Is that right?
Do I want my smoker to cook fast ? Is that a good thing ?
If I smoke a butt on my wsm with no water pan will I get similar results ?
I like the idea of fat dripping in fire. I bet the smell is out of this world.:-D
