• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Twist on wrapping meat?

Was watching the food network and Tom & Josh's Orgasmic Slabs were in a KCBS competition... He said that he LOVES the bark... so to increase the surface area he butterflies the brisket and cooks until he gets a certain color then wraps in (get this) plastic wrap then foil and back into the pit...

Plastic wrap and foil sounds like a great idea - really keep them juices in... anyone here try this?

I did a search on Tom & Josh's Orgasmic Slabs and they have some very respectable KCBS standings...

Stuff doesnt seem to melt or anything.

We do the same thing with potatoes in the microwave...
 
I wrapped some ribs that way and did not like how the wrap pulled alot of the rub off when removed. What a mess! You can get just as good of a seal with foil and tent it to keep your potential bark in place. As for butterflying, I think it was a pork butt he did. He must know what he is doing he wins alot.

When we were in the longisland competition, I saw the neighbor wrapping his in saran wrap and then in foil. Also shock if you recall, when you get a slab of ribs from super smokers, they are wrapped in saran under the foil.
