• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I learned the basic recipe from a local market that sells a similar "twice baked" potato by the hundreds each week. My variation is a "Twice Porked" potato because it has bacon and smoked, pulled pork in the filling. Here's the recipe.

cook your potato until nearly done. Cut in half lengthwise and hull into two "boats". The filling blew me away... Potato Salad!!! Its a special "baked potato" salad with bacon, cheddar cheese, and skin on potatoes. Its a commercial potato salad and one of the varieties that we can get for catering. Add to the filling a little pulled pork, sour cream, and BBQ rub. Fill the boats and top with cheddar or monterey jack cheese. Place in smoker or oven until cheese is melted and slightly browning.

A test run of our contest chicken made a very nice Sunday dinner.

Looks like two winners there PB. And my avatar enjoyed the chicken!
 
The taters look great, Todd! Does the potato salad have a mayo-based dressing? It would seem that a mayo dressing would break down when heated. What brand is the potato salad?

Walker potato salad

I would imagine the recipe would be similar to this one. Seems really similar.

4 pounds Idaho potatoes, peeled 1 pound bacon, crisply cooked, and chopped into 1/2-inch pieces (fat reserved, if desired) 4 ounces unsalted butter, softened 1/2 cup chopped green onions 2 cups grated or shredded cheddar cheese 1 1/2 cups sour cream (regular or low-fat) 1 tablespoon black pepper 1 teaspoon salt
  1. Cook whole potatoes in boiling, unsalted water until tender. Refrigerate until chilled, then chop into one-inch pieces.
  2. Transfer the potatoes to a large bowl along with the remaining ingredients and thoroughly combine. Add some of the reserved bacon fat if desired.
  3. Chill at least 2 hours before serving. Adjust the seasoning prior to serving.
Makes 2 quarts.
Note: Any condiments or toppings typically added to a loaded baked potato may be used for this recipe.

That makes total sense, no wonder the deli sells a bunch of them. Only question is what do you do with the left over potato you take out to make the skin?

buy Walkers potato salad? Look delicious! We sell a bunch of twice baked potato casserole, so this intrigues me.

My wife used to make great twice baked potatoes, but spuds are a no-no at home these days (the carbs). Maybe you idea will bring them back to the menu nonetheless.

Sounds like something I might have to try. Just took a glance to tell you were practicing you chicken. Didnt' even have to read it.
 
Man that sounds great and looks tasty, I am going to have to give that a try. Chicken looks good also.
