Turkey tonight, pulled pork, ribs and brisket tomorrow or Friday

Doing my first turkey tonight on the Shirley. Tomorrow if the weather report is favorable will be butts, brisket and ribs. I offically have realized that I stink at trussing lol.

Going to run around 300 for the cook. Hopefully I'll get good skin out of the deal.

1 hour in still at about 300. Eating some wood though. All good.

I hear ya. Thanks!! It's actually getting done much faster than I thought it would. Thought it would take around 4 hours.

HAHAHAHA!! It does. 15 pounder that looks like a 3 pounder

Bird is done. breath temped out at 168 and thighs at 173. Letting it rest loosely tented but I'm real happy withthe color.

Turkey came out awesome. Totally happy. Great flavor, super moist and got crispy skin.

Made a roux and whipped up some gravy from the drippings.

Waited about 45 minutes before carving
