• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Dude at the lodge gave me several yellowfin tuna steaks that I want to smoke on low heat. Given the small quantity I would normally grill them then scarf 'em up but I told the guy I'd smoke and share. Any ideas how to prep it? As some of you know, I brine salmon before smoking, but am little unsure how to tackle the tuna.
 
If you like mustard base, this is good.

2 tablespoons dijon honey mustard
1 tablespoon olive oil
2 tespoons soy sauce or worchestershire sauce
2 tablespoons rice wine vinegar or white vinegar
Salt & pepper
 
I make some shallows then soak the tuna in 50/50 teryaki/Soy.

Then put sesame seeds in a dish and press the tuna into the seeds. Press hard to get them to stick nice.. and get the edges. Smoke them till inside is 120. Take the grate out with the steaks on it and put the grate over the hot coals for a few seconds to make the sesame seeds pop. Flip em over to get both sides, but no more than a 10-15 seconds each.
 
When I grill tuna ( my fave) I like to use wasabi and soy mixed. That might work on the smoking too.
