Just thought I'd share. I always smoke a turkey boob for Thanksgiving, but I thought I'd try something else this year. I rubbed the 8 1/2 pound boob the previous night with Everglades, smoked it for two hours starting at about ten o'clock Thursday morning, chilled it for an hour in the fridge, injected it with 'Glades, oil, and honey, then deep-fried it for about thirty minutes at 325°.
The smoke was there, the juice was there, and it was done to a tee. The eaters and myself were well pleased.
