• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I’m going to place a foil boat Brisket in the Oklahoma Joe Bronco for an overnight cook. As close as I normally get as I start stirring around 0430. So cooking both sides of midnight with the majority of the time after midnight should count as an overnight cook. Perhaps.

A really ugly little marbling Select packer. 10# pre trimmed. Seasoned with Rudy’s BBQ Turkey Rub. Nice Rub with quite a bit of cracked black pepper. Foil boat from beginning

Lit near center with one Royal Oak Tumbleweed @ 9:30 pm

Once it’s lit and running guessing 10pm , I’ll place brisket, shut the lid and next look around 0430

I wonder about the foil boat from the beginning... just because I have never done it.
Will be watching.

First time and may have missed the fuel required. After 8.5 hours the cooker is about 225* meat is 180*. Looks great feels not quite tender in many places. At 0430 I may have hit an air/fat pocket with Inkbird probe as a 1" movement jumped temp quite a bit. Winds howled all night long with fog and mist. Storm in the area and can't tell if building or lingering. Going to bring it in and oven finish instead of starting more coals. I don't care for cooking in lightning

Not a perfect first, but it is what it is
