• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I was told there was gonna be a sale on Pork butts today for .88/lb. That's cheap around here! I decided to go to the store! My family thinks I've totally lost my mind! Ha-ha!!

Came home with 4 2-pack full pork butts, Then asked for some jerky meat. The wife wanted me make some jerky some time. Figured if I was gonna experiment making jerky with the WSM I would get enough meat to make some in the dehydrators just in case something goes wrong with the WSM!

25LB Top round roast! Wasn't on sale or anything, but I wanted to make some jerky!

2 of the pork butt packs are going for sausage. I'll grind it up with the meat grinder and make sausages! I'll post both processes! Gonna be a fun New Years weekend! Everybody be safe and have a Happy New Years!!

Would you guys freeze these pork butts whole in the freezer? I'm not sure If I could use two pieces at a time! Might have to split it up!
 
Have you ever made your own brats?

I've tried it twice. First time was a total failure. First time ever doing it we broke a lot of casings using the grinder to stuff. Air pockets and what not! 2nd attempt was much better, Made cheddar wursts (right) and regular bratwursts on the left! The cheddar ones I used shredded cheese. There wasn't enough cheese after it was cooked. So this time I think I'm gonna dice cheese chunks from a block of cheese to mix in with the ground pork.

Man, nice score. I need to get a deep freezer so I can incubate my meat obsession. I ALWAYS go and troll the meat section of grocery stores and warehouse stores. I just dont have the freezer space for a score like you have. This will soon come to fruition..... LOL

I got home, The fridge was full of crap! Had to do some special fridge cleaning today! Two of the pork butts went whole in the deep freeze out in the building. Planning on going back for 2-3 more tomorrow. The entire bottom shelf of the fridge is packed with two pork butts, and the top round roast. It's a beautiful sight!

Trying to schedule this project out. I figure I'll work the beef up, season/cure it tonight and pack it in the fridge for jerky. Tomorrow night use 25 of the pork butt and make the sausages. Going after casings and seasoning now for it. Then Saturday Its gonna be cold but I'll fire the WSM up and see if i can't keep it between 150-175 for some jerky! Gonna be fun!
 
Pork Butts was $1.69 pound here this morning at Sams Club . Wish I had them prices around here.
 
great score on the meat.

so for the last 4 years, (not really sure how it happened?) but my wife and I have always done some sort of canning, food processing, etc. last night I did 20 pints of tomato bisque, and today will be tomato sauce and tomorrow will be stewed tomato's. kind of hard to pass up on 75lbs of roma tomato's when they were $.40 a pound?
