Well this weekend my mom said no more cinnamon in her rub. so back to the drawing boards. the MRS and I spent some time making a new rub. It turned out great. Lot's of garlic, onion powder. wonderful. Then a new sauce. started with brand sauce, added vinegar, some fresh garlic and onion, then some brown sugar and a few other items, let it simmer to thicken....damn it was fine. Smoked three racks of ribs and tried the 3-2-1 method and then seared with tthe sauce for the last five minutes. FASNTASTIC!!!! Good eating ribs, but probably poor for competition as they pretty much fell off the bone. But Damn they were good!!!!!
the WSM as usual kicked out a hell of a good butt. I think I've got those down to a science. This coming weekend we have a fish fry coming up. Scott
