• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

I think I accidentally made the perfect brisket yesterday. It's been a few weeks since I smoked something, and I just had to get a brisket and butt going before I went insane. The butt was good, but not as good as some I've made. The brisket on the other hand, was so very fork-tender, and it didn't come apart when you picked it up. It cut like butter! After collecting and cooking the juices down, it had just the right flavor....could drink it straight up it was so good. The combination of the meat and juice was like Nirvana! I'm not sure if I could do it again....it was a fluke I'm sure....but I definitely need to experiment more!
 
Congrats. still working on my brisket. Just when I'm proud of product someone like Mista comes over and cooks one that makes mine tast like fast food!

I think it hit it pretty close today. I smoked a 12lbr and it is like butter. I'm going to post a thread with some pics later today or Monday.
 
I was really suprised. My brisket was just under 10 lbs, and I foiled it at 160, and I pulled it off when it got to 190......only 5 hours after putting it on. I placed it in a cooler for about 3 hours before I sliced it, all the while I was waiting on the 8 lb butt to finally hit 190....and I started them at the same time.

I don't know if it was perfect, but I remember the BEST brisket I've ever had. Cooked by my BIL, Randy (PigBoy) last year at Marshall, MO contest. I can still remember what it tasted like...beef. Seriously, to me a great brisket has to have a strong beef flavor.
 
Best brisket I've had? The guys next to us at Leesport comp yesterday. Not a good sign!
 
Hey SmokeWatcher, how far is Florence from Chandler? Sounds like you had a good time, maybe you can give us some pointers as to the cooker, temps, rubs etc? Or you could just bring one over:biggrin:
 
I put a brisket on last night about 12:30. It was for our annual church beach party. Temps were running about 275. About 5:30 I closed down most of the vents and went to sleep. I woke up about 8:30 and the fire was out. So I added the rest of the injection to the foil, wrapped it and stuck it in the oven.

When it was done I tossed it in the cooler and went to church. I got back sliced it and went to the beach.

It was funny how people who had my Q before were tracking me as I walked down the hill. I actually had a crowd of people come up and greet me when I got there. Keep in mind that there were three tables filled with food because this was a pot luck. I put the pan down, turned around to get the tongs and when I turned back, the pan was just about empty.

It may not have been the perfect brisket,but that was definitely the perfect reaction.
 
The Perfect Brisket? No, I never had it, but my family thinks they have. I always think something could be better, but when 5 people eat up a 13 lb pre cooked brisket in 1 meal, and all rave about it. I think they liked the meat. being that I do the actual cooking, I can find fault in all my food, so no. I have never cooked the perfect anything.
 
I am still chasing the "perfect brisket". I think I have come close though.
 
After many years of much less than perfect briskets on the SnP Pro, I consider the two I have done on the WSM as close to perfect as I need to get.

On the other hand, there are a few things I want to do differently next time.:mrgreen:

Yeah...but do they really have a benchmark to know what good brisket is, if they have only been exposed to yours!!! :twisted: Just kidding, my very large and good brother! 8-)

Got a pretty perfect brisket a few weeks ago - for the life of me I have no clue how to replicate it. It was so good I really didn't want to send the left overs home with the in-laws... The things you do for family harmony....
