• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Who doesn't love this exquisitely tasty and stunningly inexpensive slice of heaven? How do you blade steak? Please share pron.
 
Never heard of it. I've heard of a blade chuck roast, is it a steak cut from that?
 
Pork steaks are great on the grill it is cut from the pork butt sear over hot coals on both sides place away from the coals for about 10 minutes and there done
 
A good, cheaper cut with enough fat to not dry out. Hard to mess up grilling them.

I'm not good with these.

Nor I. I've cooked them like a chop and there was too much unredenered fat. I cooked it longer like pork shoulder and ended up too dry :mmph:


My favorite way to fix them is to sear quickly on the grill and then braise in bbq sauce, usually foil wrapped, until fork tender

This looks great. I'll try it this way next time :thumb:
 
Last ones I cooked were over a camp fire ring using a combo of charcoal and mesquite branches. A quick marinade of diced onion, garlic, salt, pepper, lime juice, and chipotle chili. These particular steaks were a mix of blade and loin, the blade were moister and more flavorful even though prepared the same.

Last year I found some about 2" thick and cooked them like a rib (smoke/foil/sauce). They turned out pretty good.
 
How long do you braise them? I really like pork steaks but have always just grilled them hot and fast?
