• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

The cook is underway.....more food porn

By the way...thanks again guys for the bean info. It really helped. Man do they smell good.

My own. I started with what the brothers offered up, I took them and ran with it. I called them mt Brethren Beans. I do plan to write down what went into them. once I get that done, I'll post it in the receipe section.

What type of rub do you put on the fatties? I've never rubbed the fatties I cook.

I never have rubbed my fatties but I believe that I will try that as well. Looks like a great Idea. What was I thinking this is a good Idea. Thanks Brother

I have tried several (actually many) rubs and they all work great for me.
Sometimes--basic pork rub from HomeBBQ for a mild flavor.
Sometimes--basic beef rub from HomeBBQ. Adds a bit of spice and heat.
Sometimes--Emeril's Essence. Now, that will kick the heat up for ya

I think almost anything you like on pork would work and it is really cheap to experiment with Fatties

I put on a minimum of black pepper on all fatties. On the breakfast flavored ones I use a sugar based rub and it makes a nice glaze, a little sticky after the foil rest. On my Polish or kielbasa fatties I use pepper and garlic powder, and a little cayenne on Italian ones.

For all beef fatties, (which I season like meatloaf anyway), they get salt, pepper, garlic & onion powder. Also a splash of wooster about halfway through the cook.

Which way did you line up the new "Sure Fire" grooves?

My OL really likes rub on the fatties. Makes 'em crust up similar to the way a patty does when you fry it in a cast iron skillet.

I used Head Country on one, the other 2 I used Spicewines Hen and Hog dust. One got a light coat of it and some teriyaki sauce it. The kids liked that one the best. The JD Hot got a good coat of the Hen and Hog Dust plus a got a drizzle of Spice's Fire Good! sauce. It was KILLER!!

My fatties I like to coat in rub and do a 2-2-1 method on them. I foiled them, sprayed down with a combo of Orange, Grape and Apple juice (everyting in the smoker got the spray treatment). The last hour I pulled 'em out of the foil, sauce them down, and put 'em back in to set a nice glaze on 'em. Basically they got the same treatment the babybacks got.

I love to rub my fatty before I cook

wait... That doesn't sound right, does it?

You guys know what I mean!

I've tried several different rubs. Most of the time I go with a sweet rub. i think it compliments the fatty flavor best.

I like Big Bob Gibson's Championship Pork Shoulder Rub on fatties. All this fatty talk has got me wanting to go out and check the interanls of mine! No lunch mod!
