• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Happy Thanksgiving :-D. Got things rolling here. First time curing a ham and smoking it myself so we’ll see how it turns out. Was a short curing time (5 days) but I did inject it a good bit. Turkey will go on later and also a boneless leg of lamb. Here some pics so far. Going to eat around 5pm. Ham went on around 9am and should be done by 3’ish I’d guess (smoker 300-325'ish). Going to do some type of mustard brown sugar glaze. Basic rub was a onion, mustard powder, pepper, cinnamon type thing we looked up this morning.

More to come. It is absolutely perfect here. Right around 60 degrees and a little cloudy so won’t get hot at all. Not normally this warm around Thanksgiving, but I will take it :biggrin1:.

Sounds good. I ran my coffee "dry" this morning. Got a bunch of random beers in the fridge and still working on this bottle

Actually not sure on that one. My wife has had it ever since I've known her :-D. She doesn't know where she got it either apparently :loco:.

Here some prep from last night. Wife made 2 pumpkin cheesecakes. I prepped some of the things that will go into the dressing. Still don't know exactly what the dressing recipe will be as we making it from bread and going a little rogue :-D. Also made mac and split the batch and put some peppers in half. Erin has a patient’s dad that always gives her hot peppers and these look to be reapers and purple ghost.

Ham is wrapped up and around 125'ish. Gave it a little juice and then will get a Frog Jam Mustard Glaze I whipped up :-D. Turkey went on at 1pm, got the gravy starting too. Make an executive decision to cook the lamb tomorrow or Saturday. 45lbs of total meat between the turkey and ham :-D

Here's the rest. The ham ended up tasting.......like ham :-D. Cured all the way through in only 5 days (with injecting). The frog jam glaze was really good on it. Turkey and everything else was great. Going to use the leftover turkey and ham tonight to make curry sliders for dinner :becky:
