Happy Thanksgiving :-D. Got things rolling here. First time curing a ham and smoking it myself so we’ll see how it turns out. Was a short curing time (5 days) but I did inject it a good bit. Turkey will go on later and also a boneless leg of lamb. Here some pics so far. Going to eat around 5pm. Ham went on around 9am and should be done by 3’ish I’d guess (smoker 300-325'ish). Going to do some type of mustard brown sugar glaze. Basic rub was a onion, mustard powder, pepper, cinnamon type thing we looked up this morning.
Made some biscuits this morning too
More to come. It is absolutely perfect here. Right around 60 degrees and a little cloudy so won’t get hot at all. Not normally this warm around Thanksgiving, but I will take it :biggrin1:.
