Texas sausage recipe.

I live in Tomball, Texas. I dabble in making sausage. I would love to have the basic recipe for the sausage sold in BBQ restaurants in Lockhart , Luling and most recently discovered GONZALES BBQ in Gonzales TX. Their sausages are probably mostly beef, coarse grind, loosely stuffed, somewhat greasy, spicy and damn good.

Bigwheel's recipe is pretty darned good. I think I remember a post somewhere that said you can replace the pork with brisket. Do a search.
