My wife is sneaky. She researched on the forum about drum smokers and she and my brother-in-laws built me a Texas Grill for my birthday. They suprised me a bit early as my Bday is in July.

I have a couple questions about this grill. It looks like it will grill well but how do you BBQ on it? How do you do the low and slow? Any help, forums recipes etc. Will be greatly appreciated.

Okay, so it's a grill that looks like Dan Blocker.

I'm of no use on this one. Good luck and you've got a nice wife for sure.
 
My Dad has a similar rig built out of pipe. If you want to cook at a lower BBQish temp, try mounding some charcoal on one side and cooking indirect on the other. Depending on how your vents are set up, you might also put a mound of charcoal on each end and an aluminum pan in the middle to put the meat over. Get yourself an oven thermometer and a bag of charcoal and see if you can keep the indirect area around 250 to 350 with any predictability and you can tailor your cooks from there.

If you could post a pic of your grill, we could probably give you some more specific comments. It's hard to know exactly how much air it will pull/exhaust with the lid closed and having a good 'draw' is key for cooking at lower BBQish temps.

First thing I would do would be to add a stack to the opposite end of your intake, add a thermo at grate level. Then play around with fire size on the intake side untill u get your temps undercontrol. Might have to make ya a baffle of some sort to block the direct heat coming from underneath the meat. But growing up I had eaten alot of good bbq coming off one of those cookers. So I know it can be done.
 
Thanks. There is a smoke hole on the opposite side of the intake. I was thinking a baffle might help. I also think I will need to split the main grill to make it easier to access the wood underneath and start it up.

I fired it up tonight to burn out the inside and get it ready to be prepped for smoking and cooking. It holds heat quite well and looks like it will work great. Just need to play with it and dial it in.

It works for loading and cleaning but starting is much easier form the top. It is easier to put the hot coals in by pouring them under the grate.
 
That's a great wife and brother in-law showing lots of love now your turn with lots of Q that's a nice grill Congrats can't wait to see what comes off of it. As for smoking or slow cooking just like a kettle food on one side lump on the other just need to get used to the temp controls and most importantly HAVE FUN!!!!!!
